Sugar Cookies with Peanut Butter

Ingredients:

  • 1/2 cup peanut butter (creamy or crunchy)
  • 2 tablespoons butter (softened)
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1 egg (or substitute with 1/4 cup evaporated milk)
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions:

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, cream together peanut butter, butter, and sugars until smooth.
  3. Add the egg (or evaporated milk) and vanilla; mix until combined.
  4. In a separate bowl, whisk flour, baking soda, and salt.
  5. Gradually mix dry ingredients into wet mixture until combined.
  6. Scoop dough onto a baking sheet and flatten slightly.
  7. Bake for 8–10 minutes until edges are golden brown.
  8. Let cool on a wire rack.

Variations:

Chocolate Chip: Add 1/2 cup chocolate chips to the dough.
Oatmeal Peanut Butter: Add 1/2 cup rolled oats for extra texture.
Nutty Twist: Add chopped nuts (like walnuts or almonds).
Jam Thumbprints: Press a small indentation into each cookie before baking and fill with jam.
Cinnamon-Sugar Coating: Roll the dough balls in cinnamon sugar before baking.
