Peanut Butter Sugar Cookies

Ingredients:

  • 1/4 to 1/2 cup peanut butter
  • 2 tablespoons butter (softened)
  • 1 can evaporated milk (optional)
  • 1 egg substitute (e.g., 1/4 cup unsweetened applesauce, 1/4 cup mashed banana, or 2 tablespoons flaxseed meal mixed with 6 tablespoons water)
  • 1 cup sugar
  • 1 1/2 cups flour
  • 1 teaspoon baking soda

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, cream together the peanut butter, butter, and sugar until light and fluffy.
  3. Add the egg substitute and mix well.
  4. Mix the flour and baking soda in a separate bowl, then gradually add it to the wet mixture, stirring until fully combined.
  5. If you want a softer texture, add a tablespoon of evaporated milk to the dough.
  6. Scoop tablespoon-sized balls of dough onto a baking sheet, spacing them about 2 inches apart. Press the tops lightly with a fork in a criss-cross pattern.
  7. Bake for 10-12 minutes, or until golden. Let cool on a wire rack before serving.
