Ingredients:
- 1/4 to 1/2 cup peanut butter
- 2 tablespoons butter (softened)
- 1 can evaporated milk (optional)
- 1 egg substitute (e.g., 1/4 cup unsweetened applesauce, 1/4 cup mashed banana, or 2 tablespoons flaxseed meal mixed with 6 tablespoons water)
- 1 cup sugar
- 1 1/2 cups flour
- 1 teaspoon baking soda
Instructions:
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the peanut butter, butter, and sugar until light and fluffy.
- Add the egg substitute and mix well.
- Mix the flour and baking soda in a separate bowl, then gradually add it to the wet mixture, stirring until fully combined.
- If you want a softer texture, add a tablespoon of evaporated milk to the dough.
- Scoop tablespoon-sized balls of dough onto a baking sheet, spacing them about 2 inches apart. Press the tops lightly with a fork in a criss-cross pattern.
- Bake for 10-12 minutes, or until golden. Let cool on a wire rack before serving.
