This rich and cheesy baked mac and cheese features tender chicken, bold flavor from extra sharp cheddar and pepper jack, and a golden, buttery breadcrumb topping. It’s comfort food at its best!
Ingredients
For the Cheese Sauce:
- 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1¾ cups whole milk
- ½ cup heavy cream or evaporated milk (optional, for extra creaminess)
- 1 cup shredded pepper jack cheese
- ½ cup shredded extra sharp cheddar
- ½ cup shredded extra sharp white cheddar
- ½ tsp salt
- ¼ tsp black pepper
- ¼ tsp garlic powder (optional)
- ½ tsp mustard or hot sauce (optional, for flavor balance)
For the Pasta and Chicken:
- 8 oz elbow macaroni (or similar pasta)
- 1½ to 2 cups cooked chicken, chopped or shredded (grilled, rotisserie, or pan-seared)
For the Breadcrumb Topping:
- ¾ cup panko breadcrumbs
- 2 tbsp melted butter
- 2 tbsp grated Parmesan cheese (optional)
- Pinch of paprika or garlic powder (optional)
Instructions
1. Prep Work
- Preheat oven to 375°F (190°C).
- Lightly grease a 9×13-inch baking dish (or equivalent).
2. Cook the Pasta
- Bring a large pot of salted water to a boil.
- Cook pasta until just al dente (1–2 minutes less than package instructions).
- Drain and set aside.
3. Make the Cheese Sauce
- In a medium saucepan, melt the butter over medium heat.
- Whisk in the flour and cook for 1 minute, stirring constantly, to make a smooth roux.
- Slowly whisk in the milk (and cream, if using) until smooth.
- Cook, stirring frequently, until the sauce thickens slightly (3–5 minutes).
- Stir in salt, pepper, garlic powder, and mustard or hot sauce, if using.
- Reduce heat to low. Gradually add the cheeses in small handfuls, stirring constantly, until fully melted and smooth.
4. Assemble the Mac & Cheese
- In a large bowl or pot, combine the cooked pasta, chopped chicken, and cheese sauce.
- Pour mixture into the prepared baking dish.
5. Make the Breadcrumb Topping
- In a small bowl, mix breadcrumbs, melted butter, Parmesan, and a pinch of paprika or garlic powder, if using.
- Sprinkle the breadcrumb mixture evenly over the mac and cheese.
6. Bake
- Bake uncovered for 20–25 minutes, or until bubbly and golden on top.
- For extra crunch, broil for the last 2–3 minutes—watch carefully to avoid burning.
7. Rest & Serve
- Let rest for 5–10 minutes before serving to allow it to set.
