Ingredients:
- 1/2 cup peanut butter (creamy or crunchy)
- 2 tablespoons butter (softened)
- 1/2 cup granulated sugar
- 1/4 cup brown sugar
- 1 egg (or substitute with 1/4 cup evaporated milk)
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
Instructions:
- Preheat oven to 350°F (175°C).
- In a bowl, cream together peanut butter, butter, and sugars until smooth.
- Add the egg (or evaporated milk) and vanilla; mix until combined.
- In a separate bowl, whisk flour, baking soda, and salt.
- Gradually mix dry ingredients into wet mixture until combined.
- Scoop dough onto a baking sheet and flatten slightly.
- Bake for 8–10 minutes until edges are golden brown.
- Let cool on a wire rack.
Variations:
Chocolate Chip: Add 1/2 cup chocolate chips to the dough.
Oatmeal Peanut Butter: Add 1/2 cup rolled oats for extra texture.
Nutty Twist: Add chopped nuts (like walnuts or almonds).
Jam Thumbprints: Press a small indentation into each cookie before baking and fill with jam.
Cinnamon-Sugar Coating: Roll the dough balls in cinnamon sugar before baking.
